Ingredients

  • 1 lb smoked sausage (chicken, pork, or turkey), sliced 1/2″ thick
  • 2 medium sweet potatoes, peeled and cut into 1″ wedges
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 3 tbsp honey
  • 2 tbsp soy sauce (or tamari for GF)
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper.
  2. In a large bowl, toss sweet potato wedges with 1 tbsp olive oil, smoked paprika, salt, and pepper.
  3. Arrange sweet potatoes in a single layer on the baking sheet. Roast for 15 minutes.
  4. While potatoes roast, whisk together remaining olive oil, honey, soy sauce, garlic, and red pepper flakes (if using).
  5. After 15 minutes, add sausage slices to the baking sheet, spreading them around the potatoes. Drizzle with the honey-garlic glaze.
  6. Return to oven and roast 10–12 more minutes, until sausage is browned and potatoes are tender and caramelized.
  7. Garnish with fresh parsley before serving.
