Ingredients

  • 1/2 lb ground pork
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic, sliced
  • 1/2 cup chicken broth
  • 1 tsp lemon juice
  • Fresh parsley, for garnish

Instructions

  1. In a large bowl, combine beef, pork, breadcrumbs, Parmesan, egg, minced garlic, parsley, salt, and pepper. Mix gently until just combined.
  2. Form into 1.5-inch meatballs (about 20).
  3. Heat olive oil in a large skillet over medium-high heat. Brown meatballs in batches, about 2–3 minutes per side. Transfer to a plate.
  4. Reduce heat to medium. Add butter and sliced garlic to skillet; cook 1 minute until fragrant.
  5. Stir in chicken broth and lemon juice, scraping up browned bits. Return meatballs to skillet, cover, and simmer 12 minutes.
  6. Garnish with fresh parsley and serve with crusty bread or over pasta.

  • For extra tenderness, chill meatball mixture 15 minutes before shaping.
