- 3 ripe bananas, mashed
- 1/2 cup unsalted butter, melted
- 2/3 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 cup milk
- For the cinnamon swirl: 2 tablespoons brown sugar + 1 teaspoon cinnamon
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan and line with parchment.
- In a large bowl, mix mashed bananas, melted butter, brown sugar, eggs, and vanilla until smooth.
- Stir in flour, baking powder, baking soda, cinnamon, and salt. Add milk and mix until just combined.
- Pour half the batter into the pan, swirl in half the cinnamon swirl mix, top with remaining batter and swirl with the rest.
- Bake 50-60 minutes, or until a toothpick tests clean. Cool in pan 15 minutes, then slice.
Notes
- Do not overmix to keep the loaf moist.
- Store in an airtight container for up to 4 days; refrigerate for longer storage.
- Glaze option: whisk 1/2 cup powdered sugar with 1-2 teaspoons milk and drizzle over cooled slices.
