  • 1/2 cup unsalted butter, melted
  • 2/3 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup milk
  • For the cinnamon swirl: 2 tablespoons brown sugar + 1 teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan and line with parchment.
  2. In a large bowl, mix mashed bananas, melted butter, brown sugar, eggs, and vanilla until smooth.
  3. Stir in flour, baking powder, baking soda, cinnamon, and salt. Add milk and mix until just combined.
  4. Pour half the batter into the pan, swirl in half the cinnamon swirl mix, top with remaining batter and swirl with the rest.
  5. Bake 50-60 minutes, or until a toothpick tests clean. Cool in pan 15 minutes, then slice.
