- 1 lb boneless sirloin steak, cut into bite-sized pieces
- 1 lb baby potatoes, halved
- 2 tbsp olive oil, divided
- 4 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp dried thyme
- Salt and pepper, to taste
- 2 tbsp unsalted butter
- Chopped parsley for garnish
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add potatoes, season with salt and pepper, and cook 8-10 minutes until golden and tender.
- Push potatoes to the side and add remaining oil. Sear steak pieces 2-3 minutes until browned on all sides.
- Add garlic, paprika, thyme, and additional salt/pepper; cook 1-2 minutes until fragrant.
- Stir in butter; cook until steak is desired doneness and potatoes are fully tender. Garnish with parsley and serve.
Notes
- Use a cast-iron skillet for even sear.
- Adjust doneness by cooking steak longer if you prefer well-done.
- Feel free to swap in sweet potatoes for a different twist.
- For extra color, finish with a squeeze of lemon juice.
