  • 1 lb baby potatoes, halved
  • 2 tbsp olive oil, divided

  • Salt and pepper, to taste
  • 2 tbsp unsalted butter
  • Chopped parsley for garnish

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add potatoes, season with salt and pepper, and cook 8-10 minutes until golden and tender.
  2. Push potatoes to the side and add remaining oil. Sear steak pieces 2-3 minutes until browned on all sides.
  3. Add garlic, paprika, thyme, and additional salt/pepper; cook 1-2 minutes until fragrant.
  4. Stir in butter; cook until steak is desired doneness and potatoes are fully tender. Garnish with parsley and serve.
