- 1 lb ground beef (80/20)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 cups cauliflower rice, cooked
- 2 cups chopped romaine lettuce
- 1 small tomato, diced
- 1/2 avocado, sliced
- 4 slices pickles
- 2 slices cheddar cheese
- 2 tbsp mayonnaise
- 1 tsp Dijon mustard
- 1 tsp lemon juice
- Fresh herbs for garnish
Instructions
- Season the beef with garlic powder, onion powder, smoked paprika, salt, and pepper. Shape into 4 smash patties.
- Cook patties in a hot skillet 2-3 minutes per side until browned and crispy.
- Warm cauliflower rice in a separate pan, then fluff with a fork.
- Assemble bowls with cauliflower rice, lettuce, tomato, avocado, pickles, and beef. Top with cheese and a quick mayo-mustard sauce.
- Garnish with herbs and serve immediately.
Notes
- Ground beef can be swapped for turkey for a leaner version
- To keep it dairy-free, omit cheese or use a dairy-free cheese
- Cauliflower rice can be swapped with grated zucchini for extra texture
