- 2 cups ripe peaches, peeled and pureed
- 1/2 cup peach juice or water
- 3 tablespoons unflavored gelatin powder
- 3-4 tablespoons honey or maple syrup, or to taste
- 1/4 teaspoon lemon juice (optional)
- Pinch of salt
Instructions
- Line a shallow pan with parchment for easy removal.
- Bloom gelatin in peach juice or water for about 5 minutes.
- Simmer peach puree with lemon juice and sweetener until warm; do not boil.
- Stir in bloomed gelatin until completely dissolved and smooth.
- Pour into the prepared pan or silicone rings and refrigerate 1–2 hours until set.
- Cut into rings if using a pan; store refrigerated in an airtight container.
Notes
- For a vegetarian option, substitute gelatin with agar-agar following package directions.
- Adjust sweetness to taste; add a splash of peach juice for a more intense peach flavor.
- Keep leftovers refrigerated; they set firmer when chilled longer.
