- 4 large bell peppers (red, yellow, or green)
- 1 cup cooked rice
- 1/2 pound ground beef or turkey
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup shredded cheese (cheddar or Monterey Jack)

- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds and membranes. Place peppers in a baking dish.
- In a skillet, cook ground meat with onion and garlic until browned. Season with salt, pepper, and paprika.
- Mix cooked rice, meat mixture, chopped parsley, and half of the shredded cheese.
- Stuff each bell pepper with the mixture and top with remaining cheese.
- Bake for 25-30 minutes until peppers are tender and cheese is bubbly and golden.
