Whipped up in under 15 minutes, these flaky ham and cheese croissants are perfect for busy mornings or lazy weekend brunches. Pre-baked or store-bought croissants are sliced open, filled with ham and cheese, then toasted until golden and melty.

  • 2 fresh or frozen croissants (about 4 oz each), thawed if frozen
  • 4 slices deli ham
  • 1 cup shredded Gruyère cheese (or Swiss/Cheddar blend)
  • 1 tbsp unsalted butter, melted
  • Pinch of freshly cracked black pepper
  • Few fresh rosemary sprigs, for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Slice each croissant horizontally through the middle, being careful not to cut all the way through (hinge-style).
  3. Inside each croissant, layer 2 slices of ham and ¼ cup shredded cheese.
  4. Gently press the top and bottom halves back together to enclose the filling.
  5. Brush the outside of each croissant lightly with melted butter.
  6. Place on the baking sheet and bake for 6–8 minutes, or until golden brown and cheese is melted.
  7. Optional: Sprinkle with black pepper and garnish with rosemary before serving.

Notes

  • For extra crispiness, toast croissants under the broiler for 1–2 minutes at the end—but watch closely.
  • Can be made ahead: fill and assemble, then freeze unbaked. Bake straight from frozen, adding 2–3 minutes to bake time.
