- 2 pounds boneless, skinless chicken thighs
- 1 can diced tomatoes with green chilies
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 packet taco seasoning
Instructions
- Place all ingredients in the slow cooker.
- Cover and cook on low 6-8 hours or high 3-4 hours.
- Shred chicken and stir to combine.
- Serve over rice, with tortillas, or with your favorite toppings.

- To freeze, assemble the ingredients in a freezer bag and freeze until ready to cook.
