- 4 boneless, skinless chicken breasts
- 1 cup fresh cranberries
- 1/2 cup honey
- 1 cup Brie cheese, sliced
- 2 tbsp olive oil
- 1 tsp fresh thyme
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Season chicken breasts with salt, pepper, and thyme.
- Heat olive oil in a skillet over medium-high heat. Sear chicken until golden brown on both sides, about 3-4 minutes per side.
- Transfer chicken to a baking dish. Spread cranberry sauce over each piece and top with slices of Brie cheese.
- Bake in the oven for 15-20 minutes until cheese is melted and chicken is cooked through.
Notes
- You can substitute fresh cranberries with thawed frozen cranberries.
- Serve with roasted vegetables or a green salad for a complete meal.
