- 2 cups fresh spinach, finely chopped and squeezed dry
- 1 cup shredded cheddar cheese (or mozzarella)
- 1 large egg
- 1/4 cup grated parmesan cheese
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- Optional: pinch red pepper flakes
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment.
- In a bowl, mix chopped spinach, shredded cheese, parmesan, egg, garlic powder, salt, pepper, and red pepper flakes if using.
- Drop spoonfuls onto the parchment and gently flatten into thin rounds to form crisps.
- Bake 8-10 minutes, or until edges are golden and centers are set. Let cool on a rack to crisp further.
- Serve warm or at room temperature with dips or as a bite-sized snack.
Notes
- For crisper wafers, press spinach mixture firmly and spread as thinly as possible.
- Store in an airtight container at room temperature for up to 2 days or refrigerate up to 1 week.
- Variations: add finely chopped herbs or a dash of smoked paprika for depth.
