Ingredients

  • 2 cups finely chopped broccoli (about 1 large head)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan
  • 1 large egg, beaten
  • 1/2 cup panko breadcrumbs
  • 1/4 cup all-purpose flour
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 2 tbsp olive oil or melted butter for brushing

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Steam broccoli until tender (3–4 mins), then finely chop or pulse in a food processor.
  3. In a large bowl, mix broccoli, cheese, Parmesan, egg, panko, flour, garlic powder, salt, and pepper.
  4. Form mixture into small tot-shaped cylinders (about 1.5 inches long).
  5. Place on baking sheet and brush tops lightly with olive oil or melted butter.
  6. Bake 12–14 minutes, flip, then bake 5–7 minutes more until golden and crisp.
  7. Cool 3–5 minutes before serving.
