- 1/2 tsp dried oregano
- 1 cup beef broth
- 2 tbsp tomato paste
- Salt and pepper to taste

Instructions
- Season beef with salt and pepper. In a large skillet, heat oil over medium-high heat and sear beef until browned on all sides.
- Add onion, garlic, and bell pepper; cook until softened and fragrant.
- Stir in potatoes, paprika, cumin, oregano, beef broth, and tomato paste. Bring to a simmer.
- Cover and cook 25-30 minutes, or until potatoes are tender and beef is fork-tender.
- Adjust seasoning. Garnish with parsley and serve hot.

- Tip: sear meat in batches to avoid crowding the pan for better browning.
- Swap beef for pork or chicken if preferred.
