Instructions
- Prepare the cooked chicken breasts by shredding or dicing. Let them cool if cooked fresh.
- Make the tzatziki sauce: in a bowl, whisk together Greek yogurt, lemon juice, olive oil, and minced garlic. Add the chopped cucumber and herbs, season with salt and pepper, then chill for 15-20 minutes.
- Combine the cooled chicken with the tzatziki sauce in a large mixing bowl. Add sliced red onion and cherry tomatoes.
- Toss gently to coat all ingredients evenly.
- Serve chilled, garnished with additional herbs or lemon wedges. Enjoy with lettuce wraps, pita, or crusty bread for a complete meal.
