- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 1 cup white chocolate chips
- 1/2 cup crushed peppermint candies
Instructions
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream butter, granulated sugar, and brown sugar until fluffy. Add vanilla and eggs, and beat well.
- Gradually mix dry ingredients into the butter mixture. Fold in white chocolate chips and crushed peppermint.
- Preheat oven to 350°F (175°C) and drop tablespoon-sized balls of dough onto baking sheets. Bake for 10-12 minutes until edges are golden.
Notes
- Store in an airtight container for up to a week.
- Freezing is an option for up to three months; just cool and bag them.
- For a lower sugar version, reduce granulated sugar by 1/4 cup.
