- 2 cups of all-purpose flour
- 1 teaspoon of baking soda
- 1/2 teaspoon of salt
- 1 cup of unsalted butter, softened
- 1 cup of brown sugar
- 1/2 cup of granulated sugar
- 1/4 cup of butterbeer (homemade or store-bought)
- 1 teaspoon of vanilla extract
- 1 cup of chocolate chips
- 1/2 cup of toffee bits (optional)
Instructions
- Prepare your ingredients and preheat oven to 350°F (175°C).
- In a saucepan, mix together butterbeer and sugars over medium heat, stirring gently until combined and simmering.
- In a large mixing bowl, cream together softened butter with brown and granulated sugars. Add vanilla extract and warm butterbeer mixture. Gradually mix in dry ingredients until just combined. Fold in chocolate chips and optional toffee bits.
- Drop rounded tablespoons of dough onto a baking sheet, bake for 10-12 minutes, or until edges are golden. Cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
- Store cookies in an airtight container at room temperature for up to one week.
- For longer storage, freeze cookies for up to three months, separating layers with parchment paper.
- Can substitute butterbeer with cream soda mixed with butterscotch syrup.
