- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 large tomatoes, diced

- 3 tablespoons olive oil
- Fresh cilantro or parsley for garnish
Instructions
- Rinse the chickpeas thoroughly under cold water and drain.
- Chop the onion, bell pepper, garlic, and dice the tomatoes.
- Heat olive oil in a large pot over medium heat. Sauté the chopped onion until translucent, then add minced garlic and bell pepper, cooking until softened. Add cumin, paprika, salt, and pepper.
- Stir in the rinsed chickpeas and diced tomatoes. Let simmer for 10 minutes to combine flavors, then garnish with fresh cilantro or parsley before serving!
