- 1 1/2 cups all-purpose flour
- 1/4 cup cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup dark chocolate chips
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract (for ganache)
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Mix flour, cocoa powder, baking soda, and salt in a bowl.
- Cream butter, sugar, and brown sugar until fluffy. Beat in egg and vanilla extract.
- Gradually add dry ingredients until just combined. Stir in chocolate chips.
- Scoop dough onto baking sheets and flatten slightly.
- Bake for 10-12 minutes, then cool on wire racks.
- Prepare ganache: Heat heavy cream until just boiling, pour over chopped chocolate, and stir until smooth. Stir in vanilla extract.
- Sandwich cooled cookies with ganache and drizzle remaining ganache on top. Let set before serving.

- For extra shine, brush the ganache with a bit of warm cream before serving.
