Instructions
- Preheat your oven to 350°F (175°C). Combine crushed graham crackers, sugar, and melted butter to create the cheesecake crust. Press into the bottom of a springform pan and bake for 10 minutes until set. Let cool.
- In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until fully combined.
- Add chopped fresh strawberries to the cream cheese mixture and gently fold to combine.
- Using a piping bag or a spoon, fill each fresh strawberry with the cream cheese mixture. Arrange on a serving platter and drizzle with melted white chocolate if desired.
