- 1 pound ground beef
- 1 diced onion
- 3 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 can black beans (15 oz), drained
- 1 cup corn kernels
- 1 packet taco seasoning
- 4 cups beef or chicken broth
- Shredded cheddar cheese
- Fresh cilantro, chopped
- Sour cream (optional)
Instructions
- In a large pot, brown the ground beef over medium heat until cooked through. Remove and set aside.
- In the same pot, sauté onions and garlic until translucent.
- Add the cooked beef back to the pot along with diced tomatoes, black beans, corn, taco seasoning, and broth.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Serve hot, topped with shredded cheese, cilantro, and optional sour cream.
Notes
- You can customize the spice level by adding more taco seasoning or chili powder.
