Ingredients

  • 1 pound ground beef
  • 1 diced onion
  • 3 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 can black beans (15 oz), drained
  • 1 cup corn kernels
  • 1 packet taco seasoning
  • 4 cups beef or chicken broth
  • Shredded cheddar cheese
  • Fresh cilantro, chopped
  • Sour cream (optional)

Instructions

  1. In a large pot, brown the ground beef over medium heat until cooked through. Remove and set aside.
  2. In the same pot, sauté onions and garlic until translucent.
  3. Add the cooked beef back to the pot along with diced tomatoes, black beans, corn, taco seasoning, and broth.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Serve hot, topped with shredded cheese, cilantro, and optional sour cream.
