- 1 lb ground beef
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 cups diced potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 4 slices bacon, cooked and crumbled
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Cook ground beef in a large pot until browned. Remove excess fat.
- Add diced onion and minced garlic; cook until soft.
- Pour in beef broth and add diced potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Stir in shredded cheddar cheese and sour cream until melted and creamy.
- Season with salt and pepper. Serve hot, topped with bacon bits and green onions.

- You can substitute ground turkey for a leaner option.
- For extra flavor, add a dash of Worcestershire sauce or hot sauce.
