Instructions
- Prepare the peaches by peeling and slicing them. Toss with lemon juice, sugar, and cinnamon, then let sit for 10 minutes.
- In a bowl, whisk together flour, baking powder, and salt. Add melted butter and vanilla, stirring until smooth.
- Pour the sliced peaches into a greased baking dish. Spoon the batter over the peaches, covering evenly.
- Preheat oven to 350°F (175°C). Bake for 40-45 minutes until the top is golden brown and bubbly. Cool slightly before serving.
