This easy chicken chow mein recipe is perfect for weeknight dinners, offering a quick, delicious, and nutritious Asian-inspired meal that everyone will love.

  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts or thighs, sliced thinly
  • 8 oz chow mein noodles or any thin egg noodles
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 cup shredded carrots
  • 1 cup sliced bell peppers
  • 1 cup shredded cabbage
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Start by slicing the chicken thinly for quick cooking. Prepare all vegetables and cook the noodles according to package instructions. Drain and set aside.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken and season with salt and pepper. Cook until golden and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add another tablespoon of oil if needed. Add minced garlic and sauté for 30 seconds until fragrant. Add shredded carrots, bell peppers, and cabbage. Cook for about 3-4 minutes until vegetables are tender but still crisp.
  4. Return the cooked chicken to the skillet with vegetables. Add cooked noodles, soy sauce, oyster sauce if using, and sesame oil. Toss everything together to coat evenly and heat through, about 2-3 minutes.
  5. Adjust seasoning with salt and pepper as needed. Serve hot, garnished with sesame seeds or chopped green onions if desired. For more quick dinner ideas, check out our dinner recipes.

Notes

  • Use thinly sliced chicken for quick and even cooking.
  • Soak the noodles in hot water if using dried egg noodles before stir-frying.
  • Adjust the soy sauce and oyster sauce to taste for a more or less salty flavor.
  • Stir-fry at high heat to keep vegetables crisp and noodles tender.
