- 1.5 lbs boneless, skinless chicken breasts or thighs, cut into chunks
- 1 cup fresh pineapple chunks
- 1/4 cup soy sauce (preferably low sodium)
- 1/4 cup honey or maple syrup
- 2 tablespoons rice vinegar
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil (for grilling)
- Salt and pepper to taste

Instructions
- In a bowl, whisk together soy sauce, honey, rice vinegar, minced garlic, grated ginger, sesame oil, and a pinch of salt and pepper to create the marinade.
- Place the chicken chunks in a large zip-top bag or container, pour the marinade over, and toss to coat evenly. Refrigerate for at least 30 minutes, up to 4 hours.
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Thread the marinated chicken pieces alternately with pineapple chunks onto the skewers.
- Preheat your grill to medium-high heat. Brush the grill grates with vegetable oil to prevent sticking. Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and has a nice charred exterior.
- During the last few minutes of grilling, brush the skewers with additional marinade or honey for a glossy finish. Let rest for a few minutes, then garnish with toasted sesame seeds and chopped green onions before serving.
Notes
- Soaking wooden skewers prevents them from burning during grilling.
- Marinate the chicken for at least 30 minutes for maximum flavor; marinating up to 4 hours enhances taste.
- Brush with extra marinade during the last minutes for a shiny, flavorful glaze.
