Instructions

  1. In a bowl, whisk together soy sauce, honey, rice vinegar, minced garlic, grated ginger, sesame oil, and a pinch of salt and pepper to create the marinade.
  2. Place the chicken chunks in a large zip-top bag or container, pour the marinade over, and toss to coat evenly. Refrigerate for at least 30 minutes, up to 4 hours.
  3. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  4. Thread the marinated chicken pieces alternately with pineapple chunks onto the skewers.
  5. Preheat your grill to medium-high heat. Brush the grill grates with vegetable oil to prevent sticking. Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and has a nice charred exterior.
