Instructions
- Prepare the Bourbon Peach Glaze: In a small saucepan, combine bourbon, honey, soy sauce, minced garlic, and grated ginger. Bring to a gentle simmer over medium heat, stirring occasionally, until the mixture reduces slightly to form a syrupy glaze. Remove from heat and set aside.
- Preheat the Oven: Preheat your oven to 400°F (200°C). Lightly grease a baking dish with olive oil or line it with parchment paper for easier cleanup.
- Season the Salmon: Pat the salmon fillets dry with paper towels. Season generously with salt and black pepper. Drizzle with a little olive oil to enhance oven roasting.
- Arrange and Add Peaches: Place the salmon fillets in the prepared baking dish. Surround each fillet with peach slices. Brush the salmon generously with the bourbon peach glaze, reserving some for serving later.
- Roast the Salmon: Bake in the preheated oven for about 12-15 minutes, or until the salmon flakes easily with a fork. During the last few minutes, brush the fillets again with the glaze for extra flavor and shine.
- Garnish and Serve: Remove from the oven and garnish with fresh thyme or basil if desired. Serve hot with your favorite sides, such as steamed vegetables or rice.
