- 4 boneless, skinless chicken breasts
- 2 ripe peaches, sliced
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 tablespoon honey
- 1 tablespoon balsamic vinegar

- Fresh basil leaves for garnish

Instructions
- Start by seasoning the chicken breasts with salt and pepper on both sides. In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook for about 6-7 minutes per side until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add a little more olive oil if needed. Add the minced garlic and cook until fragrant, about 30 seconds. Next, add the sliced peaches and cook for 2-3 minutes until they start to soften and caramelize slightly.
- Stir in the honey and balsamic vinegar to the peaches and garlic. Let the mixture simmer for a minute to combine, creating a delicious glaze.
- Return the cooked chicken breasts to the skillet, spooning the sauce over them. Let everything simmer together for another 3-4 minutes for the flavors to meld. Garnish with fresh basil leaves before serving.
Notes
- Use ripe peaches for maximum sweetness and flavor.
- If fresh peaches are unavailable, frozen peaches work well but thaw and drain excess liquid.
- Adjust the sweetness by adding more or less honey according to your preference.
- For added spice, incorporate red pepper flakes during sautéing.
