Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a mixing bowl, beat softened butter and powdered sugar until creamy.
- Add vanilla extract and mix well.
- Scoop out small portions of dough, roll into 1-inch balls, and place on the prepared baking sheet.
- Bake for 12-15 minutes until lightly golden.
- Allow cookies to cool slightly, then gently hollow out the centers and fill with raspberry jam.
- Re-dust with powdered sugar before serving.
Notes
- For best flavor, use high-quality raspberry jam. You can also roll the cookies in additional powdered sugar for a festive look.
