- 2 lbs boneless, skinless chicken breasts or thighs
- 1 cup pineapple juice
- 1/4 cup soy sauce
- 1/4 cup honey or brown sugar
- 1 teaspoon garlic minced
- 1 teaspoon ginger minced
- 1 cup pineapple chunks (fresh or canned)
- 2 tablespoons cornstarch (optional, for thickening)
- Sesame seeds and chopped green onions for garnish
Instructions
- Place chicken in the slow cooker.
- Mix pineapple juice, soy sauce, honey, garlic, and ginger; pour over chicken.
- Add pineapple chunks to the crockpot.
- Cover and cook on low for 6-8 hours until chicken is tender.
- Optional: Remove chicken and whisk in cornstarch to thicken the sauce; cook for additional 10 minutes.
- Shred chicken with two forks and return to the sauce.
- Serve over rice, garnished with sesame seeds and green onions.

- For a thicker sauce, stir in cornstarch slurry at the end.
