- 2 tbsp chipotle peppers in adobo sauce
- 1 cup jasmine rice
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Cook jasmine rice according to package instructions.
- Mix honey and chopped chipotle peppers in a bowl.
- Season chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium heat.
- Cook chicken until golden brown and cooked through, about 6-7 minutes per side.
- Brush cooked chicken with honey-chipotle sauce and let sit for 2 minutes.
- Slice chicken and serve over rice with diced peppers, drizzled with remaining sauce, garnished with cilantro.

- Use fresh cilantro for garnish for added flavor.
- Adjust spice level by adding more or less chipotle peppers.
