- 2 cups all-purpose flour
- 2 cups granulated sugar
- ¾ cup unsalted butter, softened
- 1 cup whole milk
- 4 large eggs
- 2 ½ tsp baking powder
- 1 tsp vanilla extract
- 1/2 tsp salt
- Blue food coloring
- 2 cups blue buttercream frosting
- Edible decorations (for Stitch’s features)
Instructions
- Preheat your oven to 350°F (175°C). In a large mixing bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, mixing after each. Stir in milk and vanilla extract.
- In another bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to wet mixture, blending until smooth. Add blue food coloring to achieve desired color.
- Divide batter evenly between two greased round cake pans. Bake for 25-30 minutes, until a toothpick inserted in the center comes out clean. Let cool in pans for 10 minutes before transferring to a wire rack.
- Once cooled, place one cake layer on a serving platter, spread buttercream frosting on top, and layer the second cake on top. Apply a crumb coat and chill for 30 minutes.
- After chilling, frost the cake generously with blue buttercream. Use edible decorations to create Stitch’s features and let your creativity shine!
Notes
- Store leftover cake in an airtight container in the refrigerator for up to 5 days.
- For freezing, wrap individual slices tightly and store for up to 3 months.
- To enjoy again, thaw slices in the refrigerator overnight.
