- 1 lb (450g) chicken breast, cut into bite-sized pieces
- 1 tablespoon Cajun seasoning
- 2 tablespoons olive oil
- 1 cup orzo pasta
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 3 cups chicken broth
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken with Cajun spice and set aside.
- Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned; remove and set aside.
- Add garlic and bell peppers to the skillet, cook until fragrant and slightly softened.
- Stir in orzo and cook for 1-2 minutes.
- Pour in chicken broth, bring to a boil, then reduce heat and simmer until orzo is tender and liquid is absorbed, about 10 minutes.
- Return chicken to skillet, mix well, and cook for another 2-3 minutes.
- Garnish with chopped parsley before serving.
Notes
- You can substitute chicken thighs for breasts for extra flavor.
- Adjust Cajun spice level to taste.
- Serve with a side salad for a complete meal.
