- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 3 (8-ounce) packages cream cheese, softened
- 1 cup powdered sugar
- 1/4 cup sour cream
- 2 teaspoons vanilla extract
- 1 teaspoon mint extract
- 2–3 drops of green food coloring (optional)
- 1/4 cup heavy cream
- Fresh mint leaves for garnish
Instructions
- In a large mixing bowl, combine softened cream cheese, granulated sugar, sour cream, vanilla extract, and mint extract. Beat until smooth and creamy; add food coloring if desired.
- In a separate bowl, mix chocolate cookie crumbs with melted butter and granulated sugar. Press the mixture tightly into the bottom of a 9-inch springform pan.
- Pour the mint cream cheese mixture onto the crust and smooth the top with a spatula.
- Cover with plastic wrap and chill in the refrigerator for at least 4 hours or overnight for best results. Before serving, drizzle with heavy cream and garnish with fresh mint leaves.
