- For the crust:
- 1 ½ cups chocolate cookie crumbs
- ½ cup melted butter
- For the filling:
- 16 oz cream cheese
- 1 cup granulated sugar
- 1/2 cup sour cream
- 2 large eggs
- 1 tsp peppermint extract
- 1/2 cup dark chocolate, melted
- For decoration:
- Chocolate shavings
- Fresh mint leaves
Instructions
- Preheat the oven to 350°F (175°C). Mix chocolate cookie crumbs with melted butter and press into a 9-inch springform pan. Bake for 10 minutes and cool.
- In a large mixing bowl, blend cream cheese and sugar until smooth. Add sour cream, eggs, peppermint extract, and melted chocolate. Blend until creamy.
- Pour the filling into the cooled crust, smoothing the top with a spatula.
- Bake for 50-60 minutes until set but slightly jiggly in the center. Allow to cool in the oven with the door cracked for one hour, then refrigerate for at least 4 hours.
Notes
- Store in the refrigerator for up to one week, covered tightly with plastic wrap or foil.
- Freeze slices for up to 3 months in an airtight container.
- Serve with chocolate sauce and fresh mint leaves for an enchanting presentation.
