- 1 ½ cups crushed chocolate cookies

- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 1 cup dark chocolate chips
- 2 large eggs
- 1 tsp vanilla extract
- ½ tsp peppermint extract
- Emerald green food coloring
- 2 cups powdered sugar for drizzle
- ½ cup milk (for drizzle)
Instructions
- Prepare the cookie crust by mixing crushed chocolate cookies with melted butter. Press firmly into the bottom of a lined baking dish.
- In a large mixing bowl, beat softened cream cheese and granulated sugar until smooth. Melt dark chocolate chips and mix into the cream cheese mixture. Add eggs, vanilla, and peppermint extract.
- Incorporate emerald green food coloring into the chocolate filling until desired shade is achieved.
- Pour the chocolate mint cheesecake mixture over the prepared crust and bake in a preheated oven at 325°F (160°C) for 30-35 minutes. Let cool completely before cutting into bars.

- Store leftovers in an airtight container in the refrigerator for up to one week.
- For an extra touch, garnish with fresh mint leaves or dark chocolate shavings before serving.
- These bars can be frozen if wrapped well to prevent freezer burn.
