- 200g digestive biscuits or graham crackers
- 100g unsalted butter, melted
- 300g cream cheese, softened
- 150g granulated sugar
- 200ml heavy cream
- 100g fresh mint leaves
- 200g white chocolate, melted
- 2 teaspoons peppermint extract
- 3 teaspoons gelatin powder
- 50ml cold water
- Green food coloring (gel or liquid)
- Whipped cream, for decorating
- Chocolate shavings, for garnish
Instructions
- Crush the digestive biscuits or graham crackers into fine crumbs using a food processor or by placing them in a plastic bag and crushing with a rolling pin.
- Melt the butter and combine with the cookie crumbs until evenly coated.
- Press the mixture into the bottom of a springform pan to form the crust and chill in the refrigerator for at least 30 minutes.
- Heat the heavy cream until just simmering, then add mint leaves and steep for 10 minutes. Strain out the mint leaves.
- Dissolve the gelatin powder in cold water, bloom for 5 minutes, then gently heat until dissolved. Do not boil.
- Beat the cream cheese and sugar in a large bowl until smooth.
- Mix the cooled mint cream, melted white chocolate, peppermint extract, green food coloring, and dissolved gelatin into the cream cheese mixture until vibrant and well combined.
- Pour the filling over the prepared crust and refrigerate for 4-6 hours or overnight.
- Whip heavy cream to stiff peaks, then spread or pipe over the set cheesecake. Garnish with chocolate shavings.
- Just before serving, optionally create a mist effect with dry ice or a culinary smoke gun for extra drama.
