Instructions
- Begin by crushing the digestive biscuits or graham crackers until they resemble fine crumbs. Mix the crushed cookies with the melted unsalted butter thoroughly until you achieve a uniform, crumbly mixture. Press this mixture evenly into the base of a springform pan, creating a firm, smooth crust. Chill the crust in the refrigerator for at least 30 minutes to set the base.
- In a large mixing bowl, beat the softened cream cheese and powdered sugar until smooth and creamy. Add the heavy cream, peppermint extract, and vanilla extract, and continue to beat until the mixture thickens. Incorporate green food coloring until desired shade is achieved. Pour the mixture over the chilled crust, smoothing the top with a spatula.
- Place the assembled cheesecake in the refrigerator and chill for at least 4 hours or overnight to set.
- Prepare the green jelly or gelatin glaze according to package instructions. Once set, carefully pour and spread the glaze over the chilled cheesecake. Refrigerate for an additional 30 minutes to set the glaze.
- Fill a spray bottle with hydrogenated mint syrup or infused mint water. Just before serving, lightly spray the top of the cheesecake with the mint mist. Garnish with fresh mint leaves for an extra green touch.
