Ingredients
Scale
- 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup heavy cream
- 3 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1 teaspoon smoked paprika (for extra smoky flavor)
- 1 tablespoon chopped fresh parsley for garnish
Instructions
- Start by marinating the chicken pieces in olive oil, smoked paprika, garlic powder, salt, and pepper. Let it sit for at least 15 minutes.
- Preheat your grill or grill pan to medium-high heat. Grill the chicken bites for about 4-5 minutes per side until they develop grill marks and are cooked through.
- While the chicken is grilling, prepare the sauce. In a saucepan, heat a little olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Pour in the heavy cream, Dijon mustard, and smoked paprika. Stir well and simmer for 3-5 minutes until slightly thickened.
- Add the grilled chicken bites to the sauce, toss to coat evenly, and simmer for another 2 minutes.
- Garnish with chopped parsley and serve immediately. Optionally, serve with your favorite side dishes like roasted vegetables, salad, rice, or noodles.
Notes
- For a healthier option, substitute heavy cream with coconut cream or Greek yogurt, keeping in mind the flavor differences.
- Ensure not to overcook the chicken to keep it juicy and tender.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently.
