- 1 lb sirloin steak, cut into 1-inch bites
- 1 lb baby potatoes, halved
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 2 tbsp butter
- 1 tsp smoked paprika
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 425°F (220°C).
- Toss potatoes with 2 tbsp olive oil, salt, and pepper; spread on a baking sheet.
- Roast potatoes for 20 minutes until crispy and golden.
- In a skillet over medium-high heat, sear steak bites in remaining oil for 2 minutes per side until browned.
- Reduce heat to medium; add garlic and butter, stir 30 seconds until fragrant.
- Return steak to baking sheet with potatoes; toss gently.
- Garnish with parsley and serve immediately.
Notes
- For extra crispiness, broil potatoes 2–3 minutes at the end.
- Let steak rest 3 minutes after cooking for juicier bites.
- Use medium dice potatoes for even cooking.
