- 2 lbs chicken parts (drumsticks, thighs, or breasts)
- 4 cloves garlic, minced
- 1 large onion, sliced
- 1 bell pepper, sliced
- 2 tomatoes, chopped
- 2 tbsp soy sauce
- 2 tbsp ketchup or tomato paste
- 1 tbsp all-purpose seasoning
- 1 tsp ground thyme
- 1 tsp black pepper
- 1 tsp paprika
- 1/2 tsp scotch bonnet pepper (optional for heat)
- 2 tbsp vegetable oil
- 1 cup chicken broth or water
- Salt to taste
Instructions
- Start by cleaning the chicken pieces thoroughly and marinate with soy sauce, garlic, all-purpose seasoning, thyme, black pepper, and paprika. Let sit for at least 30 minutes.
- Heat oil in a large skillet or Dutch oven over medium-high heat. Add marinated chicken and sear until golden brown on all sides. Remove and set aside.
- In the same skillet, sauté sliced onions, bell peppers, and garlic until fragrant. Add chopped tomatoes and cook for 3-4 minutes.
- Return the chicken to the skillet. Stir in ketchup or tomato paste, chicken broth, and scotch bonnet pepper if using. Cover and simmer on low heat for 40-45 minutes until tender and sauce thickens.
- Adjust seasoning with salt and pepper as needed. Allow to simmer uncovered for an additional 5 minutes for deeper flavor.

- Ensure chicken is fully cooked and tender before serving.
- For extra heat, add more scotch bonnet or habanero peppers sparingly.
- You can substitute chicken parts with boneless chicken, adjusting cooking time accordingly.
