  • 1 bell pepper, sliced
  • 2 tomatoes, chopped
  • 2 tbsp soy sauce
  • 2 tbsp ketchup or tomato paste
  • 1 tbsp all-purpose seasoning
  • 1 tsp ground thyme
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp scotch bonnet pepper (optional for heat)
  • 2 tbsp vegetable oil
  • 1 cup chicken broth or water
  • Salt to taste

Instructions

  1. Start by cleaning the chicken pieces thoroughly and marinate with soy sauce, garlic, all-purpose seasoning, thyme, black pepper, and paprika. Let sit for at least 30 minutes.
  2. Heat oil in a large skillet or Dutch oven over medium-high heat. Add marinated chicken and sear until golden brown on all sides. Remove and set aside.
  3. In the same skillet, sauté sliced onions, bell peppers, and garlic until fragrant. Add chopped tomatoes and cook for 3-4 minutes.
  4. Return the chicken to the skillet. Stir in ketchup or tomato paste, chicken broth, and scotch bonnet pepper if using. Cover and simmer on low heat for 40-45 minutes until tender and sauce thickens.
  5. Adjust seasoning with salt and pepper as needed. Allow to simmer uncovered for an additional 5 minutes for deeper flavor.
