- 1/2 cup Greek yogurt
- 2 tablespoons fresh mint leaves, chopped

- Salt and black pepper to taste

Instructions
- Wash the apples and cucumber thoroughly. Core and slice the apples into thin, bite-sized pieces. Peel the cucumber if desired, then slice into thin rounds or half-moons. Place the prepared produce in a large mixing bowl.
- In a small bowl, combine the Greek yogurt, chopped mint, lemon juice, honey (if using), salt, and pepper. Whisk until smooth and well mixed. Adjust seasoning to taste.
- Add the dressing to the bowl with apples and cucumbers. Gently toss everything until evenly coated. Sprinkle chopped nuts over the top before serving, if desired.
- Refrigerate the salad for at least 15 minutes to allow flavors to meld. Serve chilled in individual bowls or on a large platter for sharing.
Notes
- To prevent apples from browning, sprinkle with extra lemon juice before refrigerating.
