- 1 ½ cups graham cracker crumbs
- ½ cup sugar
- ½ cup unsalted butter, melted
- 24 ounces cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup butterscotch sauce
- Green food coloring
- Whipped cream, for garnish
Instructions
- Preheat the oven to 325°F (160°C). Combine graham cracker crumbs, ½ cup sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
- Beat cream cheese with 1 cup sugar until smooth. Add eggs one at a time, then mix in vanilla extract and butterscotch sauce.
- Add green food coloring to a small bowl of cheesecake mixture. Pour the remaining filling into the crust and drop spoonfuls of green mixture on top. Swirl together with a toothpick.
- Pour the cheesecake mixture into the crust and bake for about 60 minutes until the center is set. Cool in the oven for one hour with the door ajar, then refrigerate for at least four hours.
Notes
- Store in an airtight container in the refrigerator for up to 5-7 days.
- Best enjoyed fresh within a few days of making.
- Can be frozen by wrapping slices in plastic wrap and storing in a freezer-safe container.
