Instructions
- Preheat your oven to 325°F (160°C) and prepare a 9-inch springform pan.
- In a medium bowl, mix crushed graham crackers with melted butter until well combined and press into the bottom of the pan.
- In a large mixing bowl, beat softened cream cheese and granulated sugar until smooth, then add eggs one at a time and mix well.
- Blend in sour cream, lime juice, lime zest, and vanilla extract until evenly mixed.
- In a separate bowl, take about a cup of the mixture and add food coloring for the swirls.
- Pour the cheesecake mixture into the crust, creating swirls with the colored mixture using a knife.
- Bake for 50-60 minutes or until center is set, then turn off the oven and let cool inside for an hour.
- Refrigerate the cheesecake for at least four hours or overnight before serving.

- You can use store-bought crust if you’re short on time.
- For a gluten-free option, substitute with gluten-free graham crackers.
