Ingredients
Scale
- 1 box of butter pecan cake mix
- 3 ripe bananas (for banana muffins)
- 1 ½ cups of pumpkin puree (for pumpkin muffins)
- 1 cup of unsweetened applesauce (for applesauce cake)
- 1/2 cup of water
- 2 large eggs
- 1/2 cup of nuts or chocolate chips (optional)
Instructions
- Gather all your ingredients on the kitchen counter, ensuring you have your butter pecan cake mix ready.
- In a large mixing bowl, combine the butter pecan cake mix, your chosen fruit (bananas, pumpkin, or applesauce), water, and eggs. Mix thoroughly until smooth.
- Preheat your oven to 350°F (175°C) and prepare your muffin tin by greasing or lining it with paper liners. Pour the batter into the cups, filling them about two-thirds full.
- Bake for approximately 15-20 minutes, or until a toothpick inserted comes out clean. Let them cool for 10 minutes in the pan before transferring to a wire rack.
Notes
- Store any leftovers in an airtight container at room temperature for up to 3 days.
- For longer storage, freeze them for up to 3 months wrapped tightly.
- Serve warm with butter, honey, or your favorite jam.
- Feel free to substitute the cake mix for other flavors like chocolate or vanilla.
