- 1 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour

- 3 cups Quaker oats (quick or old-fashioned)
- 1 cup raisins or chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually mix this into the creamed mixture, stirring until incorporated. Add in the Quaker oats.
- Beat in the eggs and vanilla extract. If desired, fold in raisins or chocolate chips. Drop dough by rounded tablespoons onto ungreased baking sheets.
- Bake for 10-12 minutes or until the edges are lightly golden. Cool on the baking sheet for a few minutes before transferring to wire racks.
