Instructions
- Begin by sifting together the almond flour and powdered sugar into a large mixing bowl for a smooth mixture.
- In a separate bowl, beat egg whites until soft peaks form, add granulated sugar gradually, and whisk until glossy, stiff peaks appear. Mix in a few drops of green food coloring.
- Gently fold the dry ingredients into the whipped egg whites until the batter flows smoothly like lava.
- Transfer batter into a piping bag with a round tip, pipe small uniform circles onto parchment paper, tap the tray to release air bubbles.
- Bake at 150°C (300°F) for 15–20 minutes until shells lift easily, then cool completely.
- Heat heavy cream until boiling, pour over chopped chocolate, and stir until smooth to make ganache. Let cool slightly.
- Spread ganache on the bottom of one macaron shell, top with another to create a sandwich. Decorate with themed chocolates or sprinkles if desired.
- Refrigerate the assembled macarons for at least 24 hours before serving to allow flavors to meld.
