Instructions
- Start by seasoning the chicken breasts and potatoes generously with salt, pepper, and dried thyme or Italian seasoning. Drizzle everything with 1 tablespoon of olive oil to ensure even browning.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Sear the chicken breasts for about 4-5 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the halved or quartered baby potatoes. Cook for about 8-10 minutes, turning occasionally, until they’re crispy and golden on the outside. If needed, add a little more olive oil or reduce heat to prevent burning.
- Add minced garlic to the skillet with the potatoes, cooking for about 1 minute until fragrant. Reduce heat and stir in the grated parmesan cheese, allowing it to melt into a creamy sauce that coats the potatoes.
- Return the cooked chicken to the skillet, nestling it among the potatoes. Spoon some of the garlic parmesan sauce over the chicken. Cover and cook for an additional 5 minutes to blend flavors. Garnish with freshly chopped parsley before serving.

- Ensure the chicken is patted dry before seasoning for better searing.
- Don’t overcrowd the skillet—cook in batches if necessary.
- Reserve some parmesan cheese to top the dish just before serving for extra flavor.
- For a healthier option, bake the chicken and potatoes on a sheet pan instead of pan-frying.
