Instructions
- In a large mixing bowl, combine oat flour, baking soda, and salt.
- Cream together softened butter, brown sugar, and granulated sugar until fluffy.
- Add egg and vanilla extract, mixing well, then fold in chocolate chips.
- Preheat oven to 350°F (175°C) and scoop dough onto a baking sheet lined with parchment paper, spacing them 2 inches apart.
- Bake for 10-12 minutes or until edges are lightly golden.
- Let cool slightly on the baking sheet before transferring to a wire rack.

- For longer storage, freeze cookies separated by parchment paper.
