Instructions
- Start by washing and slicing the peaches into thin, uniform pieces. Drain canned peaches if using.
- In a large mixing bowl, combine vanilla yogurt, whipped cream, honey (or maple syrup), and vanilla extract. Whisk until smooth.
- Add the sliced peaches to the creamy mixture and gently fold to coat evenly. Cover and refrigerate for at least 30 minutes.
- Just before serving, sprinkle granola over the top and garnish with fresh mint leaves.

- For a dairy-free version, substitute with dairy-free yogurt and whipped coconut cream.
- Use canned peaches drained well if fresh peaches are out of season.
