- 1 tablespoon lemon juice
- 4 pav buns

Instructions
- Begin by boiling the mixed vegetables in water until they become soft. Drain and mash them thoroughly until smooth with a slight chunky texture.
- In a large pan, heat 1 tablespoon of butter. Add chopped onions and sauté until translucent.
- Pour in the pureed tomatoes and cook until the mixture thickens. Stir in pav bhaji masala, red chili powder, and salt. Cook for 2-3 minutes.
- Add the mashed vegetables to the tomato-spice mixture. Mix well and cook on low heat for 10 minutes, stirring frequently. Finish with lemon juice and garnish with chopped coriander leaves.
- Slice the pav buns horizontally. Toast the buns in a skillet with butter until golden brown on both sides.
- Serve the hot bhaji in a bowl with toasted pav on the side. Garnish with additional coriander and a squeeze of lemon. Optionally, top with chopped onions and extra butter for authentic flavor.
