Instructions

  1. Begin by boiling the mixed vegetables in water until they become soft. Drain and mash them thoroughly until smooth with a slight chunky texture.
  2. In a large pan, heat 1 tablespoon of butter. Add chopped onions and sauté until translucent.
  3. Pour in the pureed tomatoes and cook until the mixture thickens. Stir in pav bhaji masala, red chili powder, and salt. Cook for 2-3 minutes.
  4. Add the mashed vegetables to the tomato-spice mixture. Mix well and cook on low heat for 10 minutes, stirring frequently. Finish with lemon juice and garnish with chopped coriander leaves.
  5. Slice the pav buns horizontally. Toast the buns in a skillet with butter until golden brown on both sides.
  6. Serve the hot bhaji in a bowl with toasted pav on the side. Garnish with additional coriander and a squeeze of lemon. Optionally, top with chopped onions and extra butter for authentic flavor.
